WHAT IS SMALL BATCH CUISINE?
Most restaurants create what are referred to as "production quantities" of food.These are designed to last for several days and often up to a week.
The vast majority of our menu is designed to be prepared to order, or in professional culinary terms 'a la minute'
Like a small batch brewing or distilling our philosophy is to present products as directly and simply as possible.
We also utilize a network of small independent family-owned farms located in Cumberland and western Atlantic counties for virtually all of the fresh produce and fruits we serve.
This also means that our kitchen will on occasion run out of popular items.
